Goose breast refers to the meat obtained from the breast area of a goose. It is a flavorful meat that can be prepared in various ways, similar to other poultry meats like chicken or duck. Goose breast has a distinct taste, which is slightly different from chicken since it is very matured. It contains a good amount of fat in the skin, which adds flavor and moisture when cooked properly. This delicious dish is often roasted, pan-seared, grilled, or smoked. Ingredients
  

  • 2 goose breasts
  • Salt and pepper to taste
  • Butter
  • Herbs or spices for seasoning such as rosemary, thyme, garlic powder, or paprika
  • Any other seasoning of your choice

Instructions
 

  • Make ready all your ingredients and preheat your oven. Wash the goose breasts in the sink under cold water and pat them dry with paper towels.
  • Make the skin of the goose breasts lightly in a criss-cross pattern, making sure not to cut into the meat. This helps the fat to render gently while cooking.
  • Sprinkle or season the goose breasts with salt and pepper as well as any other seasonings on both sides.
  • Heat a sizeable pan over medium-high heat with a bit of olive oil or butter and place the goose breasts, skin-side down, in the hot skillet and cook for about a few minutes until the skin becomes golden brown and crispy. Flip the breasts and fry the other side for some additional minutes.
  • Transfer the goose breasts to a baking dish lined with foil or parchment paper, placing them skin-side up and roast the goose breasts in the oven for some minutes. Goose breast is best served medium-rare to medium to prevent it from becoming tough and dry.
  • When cooked to your liking, remove the goose breasts from the oven and let them rest for a few minutes before slicing. This allows the juices to redistribute throughout the meat, slice the goose breasts against the grain and serve them with your choice of sides dish.
