Equipment

Ingredients
  

  • green chlies
  • mustard oil
  • mustard seeds
  • fenugreek seeds
  • ginger
  • garlic paste
  • lemon juice
  • salt to taste
  • asafoetida

Instructions
 

  • Wash the green chillies thoroughly and pat them dry with a paper towel.Trim the stems and chop the chillies into small pieces. You can keep them whole or slice them lengthwise based on your preference.
  • In a mixing bowl, combine the chopped green chillies with salt and lemon juice (or vinegar). Toss the chillies well to coat them with the seasoning. Allow them to marinate for about 15-20 minutes.
  • In a small pan, heat the mustard oil until it reaches the smoking point. Turn off the heat and let it cool slightly.
  • In the same pan, add mustard seeds, fenugreek seeds, turmeric powder, and asafoetida. Roast them for a few seconds to release their aroma. Optionally, you can also add any other optional spices mentioned above for additional flavors.
  • Pour the slightly cooled oil mixture over the marinated green chillies. Add ginger-garlic paste to the mixture and mix everything well to combine.
  • Transfer the spiced green chillies to a sterilized glass jar. Press the chillies down slightly to remove any air pockets.
  • Seal the jar tightly and keep it in a cool and dry place for 1-2 days. The flavors will develop during this time, and the pickle will become more flavorful.
  • Once the pickling process is complete, your homemade chilli pickle is ready to enjoy. Serve it as a spicy accompaniment to rice, Indian bread (roti), or any other meal of your choice.
