Instructions
 

  • Preheat the oven to 375°F (190°C).
  • Pat the goose breasts dry with paper towels. This helps to ensure a better sear and crispiness.
  • Score the skin of the goose breasts with a sharp knife in a crosshatch pattern. Be careful not to cut too deep into the meat, just through the skin and fat.

  • Heat a skillet or oven-safe pan on the stove over medium-high heat. Add a bit of olive oil or butter to the pan.
  • Once the pan is hot, place the goose breasts skin-side down in the skillet. Sear them for about 3-4 minutes until the skin turns golden brown and crispy.
  • Flip the breasts over and sear the other side for an additional 2-3 minutes to brown the meat.
  • Transfer the skillet with the goose breasts to the preheated oven.
  • Roast the goose breasts in the oven for approximately 10-15 minutes for medium-rare doneness. Cooking time will vary depending on the thickness of the breasts and desired level of doneness. Use a meat thermometer to check for an internal temperature of about 130-135°F (54-57°C) for medium-rare or 140-145°F (60-63°C) for medium.
  • Once done, remove the goose breasts from the oven and let them rest for a few minutes before slicing. This resting period allows the juices to redistribute, resulting in a juicier and more flavorful meat.
  • Slice the goose breasts against the grain into thin slices and serve immediately.
