  • Cut the potatoes into wedges or cubes, depending on your preference. For wedges, halve the potatoes lengthwise, then cut each half into 2-3 long wedges. For cubes, dice the potatoes into roughly 1-inch pieces.
  • Place the cut potatoes in a large bowl. Drizzle olive oil over the potatoes, ensuring they are evenly coated. Season generously with salt and pepper. Add any additional seasonings or herbs of your choice for extra flavor.
  • Toss the potatoes in the bowl to coat them thoroughly with the oil and seasonings.
