Equipment

  • Blender or food processor
  • Fine-mesh
  • ice cream maker

Ingredients

  • frozen raspberries
  • granulated sugar
  • cup water
  • lemon juice
  • Fresh raspberries

Instructions

  • If using fresh raspberries, rinse them thoroughly and remove any stems or debris. If using frozen raspberries, let them thaw slightly.
  • In a saucepan, combine the granulated sugar and water. Heat the mixture over medium heat, stirring occasionally, until the sugar completely dissolves. Remove the syrup from the heat and let it cool to room temperature.
  • Place the raspberries in a blender or food processor and blend until they turn into a smooth puree.
  • For a smoother sorbet, strain the raspberry puree through a fine-mesh sieve or cheesecloth to remove the seeds. Press the puree with the back of a spoon to extract as much liquid as possible.
  • In a mixing bowl, combine the raspberry puree, cooled sugar syrup, and freshly squeezed lemon juice. Stir well to thoroughly combine all the ingredients.
  • Cover the bowl and place it in the refrigerator to chill for at least 2-3 hours or until completely cold. Chilling helps enhance the flavors.
  • Transfer the chilled raspberry mixture to an ice cream maker and churn according to the manufacturer's instructions until the sorbet reaches a slushy, frozen consistency.
  • If you don’t have an ice cream maker, pour the chilled raspberry mixture into a shallow, freezer-safe container. Place it in the freezer. Every 30 minutes, stir the mixture with a fork or whisk to break up ice crystals until it reaches a sorbet consistency, usually about 4-6 hours.
  • Once the sorbet reaches the desired consistency, scoop it into bowls or serving glasses. Garnish with fresh raspberries and mint leaves if desired.
