Ingredients
- pasta (such as fusilli, rotini, or penne)
- chicken breast
- cherry tomatoes
- cucumber
- red bell pepper
- black olives
- onion
- parsley
Instructions
- Cook the pasta in a pot of boiling salted water according to the package instructions until it's al dente. Drain and rinse the pasta under cold water to stop the cooking process. Set aside.
- In a large mixing bowl, combine the diced cooked chicken breast, ham, or salami with the halved cherry tomatoes, diced cucumber, diced red bell pepper, sliced black olives, and finely chopped red onion.
- In a small bowl, whisk together the extra-virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper until well combined.
- Add the cooked and cooled pasta to the bowl with the vegetables and meat.
- Pour the dressing over the pasta, meat, and vegetables. Gently toss everything together until the salad is evenly coated with the dressing.
- Cover the pasta salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
