Schupfnudel Salad is a delightful and refreshing dish featuring boiled Schupfnudeln combined with fresh vegetables, herbs, and a tangy dressing. Ingredients
  

  • Schupfnudeln
  • bell pepper red and yellow
  • cucumber
  • red onion
  • tomatoes
  • fresh parsley
  • chives
  • salt and pepper
  • olive oil
  • whitevinegar
  • dijon mustard
  • honey
  • garlic

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the Schupfnudeln according to the package instructions or until they float to the surface. Drain and set aside to cool slightly.
  • While the Schupfnudeln are cooking, prepare the vegetables. Dice the red and yellow bell peppers, cucumber, and red onion. Halve the cherry tomatoes. Chop the fresh parsley and chives.
  • In a small bowl, whisk together the olive oil, white wine vinegar (or apple cider vinegar), Dijon mustard, minced garlic, honey (or sugar), salt, and pepper until well combined. Set the dressing aside.
  • In a large mixing bowl, combine the cooked and slightly cooled Schupfnudeln with the diced bell peppers, cucumber, red onion, cherry tomatoes, chopped parsley, and chopped chives.
  • Season the salad with salt and pepper to taste.
  • Pour the prepared dressing over the Schupfnudel and vegetable mixture in the bowl.
  • Gently toss all the ingredients together until the dressing coats the salad evenly.
  • Refrigerate the Schupfnudel salad for at least 30 minutes to allow the flavors to meld together and for the salad to chill.
  • Before serving, give the salad a final toss and adjust seasoning if needed.
