Tandoori Chicken is a classic Indian dish featuring marinated chicken with aromatic spices, yogurt, and herbs, traditionally cooked in a tandoor (clay oven). This recipe offers a method to replicate the flavors at home using an oven.
Homemade Tandoori Chicken

- lemon juice
- vegetable oil or melted ghee
- ginger-garlic paste

Instructions
- Rinse the chicken pieces and pat them dry with paper towels. Use a knife to make a few deep slashes or cuts in the chicken to help the marinade penetrate.
- In a mixing bowl, combine the plain yogurt, tandoori masala spice blend, lemon juice, vegetable oil or ghee, ginger-garlic paste, ground cumin, ground coriander, paprika, turmeric powder, cayenne pepper, and salt. Mix well to form a smooth marinade.
- Coat the chicken pieces thoroughly with the prepared marinade. Ensure the marinade gets into the cuts made on the chicken.
- Cover the bowl with plastic wrap or transfer everything into a sealable plastic bag. Refrigerate and let the chicken marinate for at least 4 hours or preferably overnight for best results.
- Preheat the oven to 425°F (220°C). Line a baking dish or tray with aluminum foil and lightly grease it.
- Place the marinated chicken pieces on the prepared baking dish, leaving some space between each piece.
- Bake in the preheated oven for about 25-30 minutes or until the chicken is fully cooked, juices run clear, and the surface is charred in spots. For better color, broil for the last 2-3 minutes.
- Once done, remove the Tandoori Chicken from the oven. Garnish with fresh cilantro or serve with lemon wedges. Serve hot with naan bread, rice, or your choice of sides.
Notes
- If desired, you can use a mix of chicken thighs, drumsticks, or breast pieces.
- Adjust the amount of cayenne pepper for the desired level of spiciness.
- Tandoori masala spice blends are available in most grocery stores. Alternatively, you can make your own blend using spices like cumin, coriander, paprika, turmeric, and garam masala.
