Spicy Chicken Curry Rice

Ingredients
  

  • boneless chicken
  • herbs and spices
  • vegetable oil
  • coconut milk
  • rice
  • salt and pepper
  • vegetables

Instructions
 

  • Heat vegetable oil or ghee in a large skillet over medium-high heat. Add the chopped onion and sauté until it becomes translucent.
  • Add minced garlic and grated ginger to the skillet and cook for about 1 minute until fragrant.Add the chicken pieces to the skillet and cook until they are lightly browned on all sides.
  • Sprinkle curry powder, ground cumin, ground turmeric, and chili powder over the chicken. Stir well to coat the chicken with the spices.
  • Pour in the diced tomatoes with their juices. Stir and let it simmer for a couple of minutes.
  • Pour in the coconut milk and chicken broth into the skillet. Stir to combine all ingredients. Bring the mixture to a gentle boil.
  • Reduce the heat to low, cover the skillet with a lid, and let the curry simmer for about 25-30 minutes, stirring occasionally, until the chicken is fully cooked and the flavors meld together.
  • Check for seasoning and add salt and pepper as needed.
  • Once the chicken curry is done, remove it from heat. Serve the Chicken Curry over cooked rice.Garnish with chopped fresh cilantro before serving.
