Sausage with stewed potatoes is a delicious dish that typically consists of sausages (such as pork, chicken, or any preferred variety) cooked together with chunks of potatoes in a seasoned broth or tomato-based sauce. The sausages are often browned first to develop flavor and then simmered along with potatoes, onions, garlic, herbs, and sometimes diced tomatoes or broth until the potatoes are tender and infused with the savory flavors of the dish. Ingredients
  

  • Sausages your choice of pork, chicken, or any preferred variety
  • Large potatoes peeled and cut into chunks
  • Onion finely chopped
  • Garlic minced
  • Red bell pepper
  • Diced tomatoes
  • Chicken or vegetable broth or tomato sauce
  • Paprika
  • Dried thyme
  • Salt and pepper to taste
  • Olive oil
  • Chopped fresh parsley for garnish optional

Instructions
 

  • Assemble your ingredients
  • Grab your casserole dish or large skillet or pan.
  • Heat olive oil in the large skillet or pan over medium heat.
  • Add the sausages (cut into smaller chunks or sizeable pieces) and cook until browned on all sides, for few minutes.
  • Remove sausages and set aside.
  • Add the chopped onions and sauté until they turn translucent, in the same pan, Add the minced garlic and cook for an additional minute.
  • Stir in the diced tomatoes, paprika, dried thyme, salt, and pepper. Let it simmer for 5 minutes, allowing the flavors to meld.
  • Or pour in your tomato sauce and let it simmer for a few minutes.
  • After sometime, add in the potato chunks to the pan and pour in the chicken or vegetable broth.
  • Stir slowly to combine.
  • Bring the mixture to a gentle boil, then reduce the heat to low. Cover the pan and let it simmer for 15-20 minutes or until the potatoes are tender.
  • Once the potatoes are cooked through, return the browned sausages to the pan. Cover and simmer for an additional 5 minutes, allowing the flavors to blend and the sausages to heat through.
  • Taste and adjust seasoning if needed. Garnish with chopped fresh parsley .
  • Serve the sausage with stewed potatoes hot, straight from the pan, and enjoy this comforting dish as a satisfying meal.
