Potato stew features tender chicken thigh fillets, potatoes, and carrots cooked together for a delicious, comforting one-pot dish. This one-pot chicken stew recipe practically cooks itself! It's made all in one pot with tender chunks of chicken, potatoes, and some colorful vegetables.

Ingredients
  

  • Chicken thighs or breasts, cut into bite-sized pieces

  • Olive oil

  • Onion, chopped

  • Garlic, minced

  • Carrots, peeled and diced

  • Celery stalks, diced

  • Medium-sized potatoes, peeled and diced into cubes

  • Chicken broth

  • Frozen peas (optional)

  • Tomato paste

  • Dried thyme

  • Dried rosemary

  • Salt and pepper to taste

Instructions
 

  • Gather your ingredients
  • Heat olive oil in a large pot or casserole dish over medium heat. Add chopped onion and cook until it becomes translucent.
  • Add minced garlic and chicken pieces to the pot. Cook until the chicken is lightly browned on all sides.
  • Add in diced carrots, celery, and potatoes. Cook for a few minutes until the vegetables begin to soften.
  • Pour in the chicken broth, add the tomato paste, dried thyme, dried rosemary, salt, and pepper. Stir well to combine all the ingredients.
  • Bring the stew to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 15-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  • For the frozen peas, add them to the stew during the last 5 minutes of cooking.
  • Taste and adjust the seasoning if needed.
  • Serve the chicken stew hot.
