Chicken stew in the pressure cooker
The classic chicken stew has its roots in Portuguese cuisine. This dish popularized by the Syrian Christian families in Kerala is extremely aromatic and flavoursome. Check out the pretty simple recipe of rich and creamy chicken stew that pairs amazingly with breakfast items like appam, puttu and idiyappam. Chicken stew is a savory dish made by simmering chicken pieces along with vegetables (such as carrots, celery, onions, etc.) in a flavorful broth or sauce until the ingredients are tender and well-cooked.
Ingredients
- 1 pounds boneless, skinless chicken thighs or breasts, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 cups chicken broth
- 2.5 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 teaspoon dried rosemary
- 2 tablespoons cornstarch (optional, for thickening)
Instructions
- Gather all your ingredients
- Get your Pressure cooker and set it to sauté mode. Heat the olive oil and add the chopped onion and garlic. Cook until they're soft and translucent.
- Add the chicken pieces and cook or fry until they're lightly browned on all sides.
- Add in the carrots, celery, diced tomatoes, dried thyme, dried rosemary, salt, and pepper and stir.
- Pour in the chicken broth. Stir well to combine all the ingredients.
- Close the pressure cooker lid and set it to cook on high pressure for about 9-12 minutes.
- When done, perform a quick release according to your pressure cooker's instructions.
- To make your stew thicker, mix 2 tablespoons of cornstarch with a little cold water to create a slurry. Stir the slurry into the stew and set the pressure cooker to sauté mode again. Let it simmer and thicken for a few minutes while stirring occasionally.
- Taste and adjust seasoning if needed. Serve hot, garnished with chopped fresh parsley if desired.
