Ingredients
  

  • Lamb stew meat, cut into chunks

  • tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 1 potatoes, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 3 cups beef or vegetable broth
  • 1 cup red wine (optional)
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions
 

  • Gather all your ingredients and let us start cooking.
  • In a large pot or Dutch oven, heat olive oil over medium heat and add the chopped onion, and cook until it turns translucent.
  • Add minced garlic and cook for another minute until fragrant.
  • Then, add the chunks of lamb meat and cook until they're browned on all sides.
  • Stir in carrots, potatoes, and celery. Cook for a few minutes.
  • Continue to pour in beef or vegetable broth and red wine (if using).
    Add bay leaves, dried thyme, salt, and pepper. Stir well to combine.
  • Simmer the stew. Cover the pot and let it simmer on low heat for about 1½ to 2 hours, or until the lamb is tender and the vegetables are cooked through.
  • Taste and adjust seasoning if needed.
    Once done, remove from heat and let it rest for a few minutes.
