Hearty Chicken Leg and Thigh Stew

Ingredients
  

  • chicken thigh and leg
  • olive oil
  • Assorted vegetables (such as bell peppers, broccoli, carrots, snap peas, mushrooms, etc.), sliced or chopped
  • salt and pepper
  • Herbs and spices (thyme, bay leaves, pepper, etc.)

Instructions
 

  • Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken legs and thighs, and brown them on all sides. Once browned, remove them from the pot and set them aside.
  • In the same pot, add chopped onion and minced garlic. Sauté until the onions become translucent. Add diced carrots, diced celery, and potato chunks. Cook for a few minutes until they begin to soften.
  • Return the browned chicken legs and thighs to the pot. Pour in chicken broth and add diced tomatoes, dried thyme, dried rosemary, bay leaf, salt, and pepper. Stir to combine all ingredients.
  • Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 1 hour until the chicken is cooked through and the vegetables are tender. Stir occasionally.
  • Once the stew is done, remove the bay leaf. Ladle the chicken leg and thigh stew into serving bowls. Garnish with chopped parsley. Serve hot with crusty bread or cooked rice, if desired.
