Ingredients
  

  • bone-in, skin-on chicken thigh
  • olive oil
  • garlic
  • carrots
  • celer stalks
  • potatoes
  • peas
  • vegetable broth
  • thyme
  • bay leaves
  • salt and pepper

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Season the chicken thighs with salt and pepper, then brown them in the pot until golden on both sides. Once done, remove and set aside.
  • In the same pot, add the chopped onion and sauté until translucent. Add the minced garlic and cook for another minute until fragrant.
  • Stir in the carrots, celery, and diced potatoes. Cook for a few minutes until slightly softened.
    Pour in the chicken broth and diced tomatoes with their juices. Add the bay leaves, dried thyme, paprika, and season with salt and pepper to taste.
  • Return the browned chicken thighs to the pot, along with any accumulated juices. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 30-35 minutes or until the chicken is tender and cooked through.
  • About 10 minutes before the stew is done, add the frozen peas and stir gently to incorporate.
    Once the chicken is cooked and the vegetables are tender, remove the bay leaves. Taste and adjust seasoning if needed.
  • Serve the Country-Style Chicken Stew in bowls, garnished with chopped fresh parsley if desired. Pair it with crusty bread or rice for a fulfilling meal.
