Ingredients
  

  • chayote squash
  • onion
  • tomatoes
  • cucumber
  • cilantro
  • lime juice
  • olive oil
  • salt and pepper

Instructions
 

  • Peel the chayote squash and remove the seeds if present. Slice or julienne the chayote into thin strips. You can use a mandoline slicer or a sharp knife for this.
  • In a mixing bowl, combine the sliced chayote, thinly sliced red onion, diced tomato, diced cucumber, and chopped cilantro or parsley.
  • In a small bowl, whisk together the freshly squeezed lime juice and olive oil. Season the dressing with salt and pepper according to taste.
  • Pour the lime and olive oil dressing over the salad ingredients in the mixing bowl. Gently toss the salad until all the ingredients are well coated with the dressing.
  • If preferred, refrigerate the salad for about 15-20 minutes before serving to allow the flavors to meld together.
  • Once chilled (if desired), transfer the chayote salad to a serving dish and serve it as a refreshing side dish or appetizer.
