Ingredients
  

  • 1 cup white rice
  • ripe pequi fruits
  • water
  • salt

  • Peel the pequi fruits and remove the seeds. Some people prefer to boil the pequi for a few minutes before using to soften them and reduce their bitterness.
  • In a saucepan or pot, heat a small amount of oil over medium heat. If using onions or garlic, sauté them until translucent.
  • Add the prepared pequi fruits to the pot and sauté briefly to release their flavor. Then, add the washed and drained rice to the pot and stir for a couple of minutes to coat the rice with the flavors.
  • Pour in the water or vegetable broth into the pot. Season with salt to taste. Bring the mixture to a boil.
  • Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is fully cooked and has absorbed the liquid.
  • Once the rice is cooked, fluff it with a fork to separate the grains and distribute the pequi evenly throughout. Serve the pequi rice as a flavorful side dish to complement various Brazilian meals.
