Indian-Style Corn and Rice Pilaf

A delicious Indian-style corn and rice pilaf, combining basmati rice, sweet corn, and aromatic spices.It seems there might be a bit of confusion with the term "mealie rice" as it is not a typical Indian term. However, if you are referring to a dish that combines rice with corn (maize), it's possible you are thinking of a fusion dish.

Ingredients
  

  • basmati rice
  • vegetables
  • spices and herbs
  • salt and pepper
  • lemon wedges

Instructions
 

  • Rinse basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  • In a large pan or pot, heat oil or ghee over medium heat. Add cumin seeds and mustard seeds. Once they splutter, add chopped onions and sauté until golden brown.
  • Add minced garlic, grated ginger, and chopped green chilies. Sauté for a minute until the raw aroma disappears. Add turmeric powder, cumin powder, coriander powder, and garam masala. Mix well.
  • Add sweet corn kernels and green peas (if using) to the pot. Cook for 2-3 minutes until they are slightly tender.
  • Drain the soaked rice and add it to the pot. Stir gently to coat the rice with the spices.
  • Pour 2 cups of water into the pot. Add salt according to your taste. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a tight-fitting lid and let it simmer until the rice is cooked and the water is absorbed.
  • Once the rice is cooked, fluff it gently with a fork. Garnish with fresh cilantro
  • Serve the Indian-style corn and rice pilaf hot, with lemon wedges on the side. It pairs well with raita or a simple cucumber salad.
