How to make pea soup in the pressure cooker

Pea soup in the pressure cooker is a quick and efficient method of preparing a flavorful and hearty soup using a pressure cooker. This recipe involves combining ingredients like dried peas or fresh peas, along with vegetables, herbs, and broth, then cooking them under pressure in a pressure cooker. The high-pressure environment allows for a faster cooking time, resulting in a rich and creamy pea soup that typically takes a fraction of the time it would require using traditional stovetop methods. The pressure cooker helps to soften the peas and meld the flavors together, creating a delicious and comforting soup in a significantly reduced cooking time.

Ingredients

  • 1 1/2 cups dried green peas (or 4 cups of fresh peas)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable or chicken broth
  • 4 cups water
  • 1 leaf
  • Salt and pepper to taste

  • Olive oil

  • Optional: Fresh herbs for garnish (such as thyme or parsley)

Instructions

  • If using dried peas, rinse them thoroughly. If using fresh peas, shell and set them aside. Chop the onion, garlic, carrots, and celery.
  • Turn on the pressure cooker's sauté function and heat a drizzle of olive oil. Sauté the chopped onions and garlic until they're soft and fragrant, for about 2-3 minutes.
  • Add the diced carrots, celery, dried peas (or fresh peas), vegetable or chicken broth, water, and the bay leaf to the pressure cooker. Season with salt and pepper according to your taste.
  • Secure the lid of the pressure cooker and set it to high pressure. Cook the soup for around 8-10 minutes if using dried peas or 3-4 minutes if using fresh peas.
  • Once the cooking time is complete, allow for a natural pressure release for about 10 minutes, then carefully perform a quick pressure release.
  • Open the lid and check the consistency of the soup. If it's too thick, you can add more water or broth. Adjust the seasoning as needed.
  • Ladle the pea soup into bowls. If desired, garnish with fresh herbs like thyme or parsley.

Notes

An important aspect to note when making pea soup in a pressure cooker is to be mindful of the liquid levels. Peas have a tendency to absorb a significant amount of liquid during cooking, so ensuring an adequate amount of liquid (broth or water) is added is crucial to prevent the soup from becoming too thick or dry. While using the pressure cooker, it's essential to follow the manufacturer's guidelines for liquid quantity, avoiding exceeding the maximum fill level and allowing enough space for the peas to expand during the cooking process. Adjusting the liquid content accordingly can help achieve the desired consistency of the pea soup.
