  • 4 cups vegetable or chicken broth
  • Salt and pepper to taste

  • 1 cup uncooked noodles (your choice: pasta, rice noodles, etc.)
  • Chopped fresh cilantro or green onions for garnish

  • Olive oil for cooking

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add chopped onions and cook until they're translucent.
  • Add minced garlic, diced bell pepper, cumin, and chili powder. Stir and cook for a few minutes until the spices are fragrant.
  • Pour in the black beans and vegetable or chicken broth. Bring the mixture to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld together. Season with salt and pepper.
  • Cook the noodles separately according to the package instructions. Once they're done, drain and set them aside.
  • In the soup pot, use an immersion blender or transfer a portion of the soup to a blender and blend until it reaches your desired consistency.
