Ingredients
  

  • cow's feet
  • onion
  • garlic
  • bay leaf
  • salt and black pepper
  • white rice
  • olive oil
  • hot sauce
  • fresh cilantro leaves
  • juice of lime

Instructions
 

  • In a large pot, combine cow's feet pieces, chopped onion, minced garlic, bay leaves, salt, and black pepper. Cover with water and bring to a boil. Reduce the heat to low, cover the pot, and simmer for 3-4 hours or until the cow's feet are tender and the broth is flavorful. Skim off any foam or impurities that rise to the surface during cooking.
  • While the cow's feet are simmering, cook the kidney beans and rice separately according to the package instructions. Set aside.
  • Once the cow's feet are tender, remove them from the broth. Discard the bay leaves. Strain the broth to remove any solids, ensuring a clear soup base. Return the broth to the pot.
  • Return the cow's feet to the pot. Add the cooked kidney beans and rice. Stir well to combine.
  • Add chopped cilantro, green onions, and olive oil to the soup. Squeeze in the juice of one lime. Season with hot sauce if desired for extra heat. Taste and adjust the seasoning with salt and black pepper if necessary.
  • Ladle the Mocotó soup into bowls. Garnish with fresh cilantro leaves and serve hot with lime wedges on the side.
