Ingredients
  

  • boneless, skinless chicken breasts
  • tucupi sauce
  • onion
  • garlic
  • bell pepper
  • cumin
  • coriander
  • salt and black pepper
  • parsley
  • vegetable oil
  • cilantro

Instructions
 

  • Season the chicken pieces with ground cumin, ground coriander, salt, and black pepper. Set aside to marinate for at least 15 minutes.
  • In a large pan, heat vegetable oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and continue to sauté for another minute until fragrant.
  • Add the marinated chicken pieces to the pan. Cook until the chicken is browned on all sides and cooked through. Remove the cooked chicken from the pan and set it aside.
  • In the same pan, add thinly sliced red and green bell peppers. Sauté until they are tender yet slightly crisp.
  • Pour the Tucupi sauce into the pan with the sautéed vegetables. Stir well to combine. Let the sauce simmer for a few minutes to absorb the flavors of the aromatics and chicken.
  • Return the cooked chicken to the pan with the Tucupi sauce. Stir to coat the chicken evenly with the sauce. Let it simmer for an additional 5-7 minutes to allow the flavors to meld together.
  • Taste the dish and adjust the seasoning with salt and black pepper if necessary. The Tucupi sauce is tangy, so adjust the seasoning according to your taste preferences.
  • Serve the Chicken in Tucupi Sauce over cooked rice. Garnish with freshly chopped cilantro for a burst of freshness and color.
