Ingredients
  

  • 1 cup tapioca pearls
  • olive oil
  • onion
  • garlic
  • chicken breast
  • cumin
  • bellpepper
  • fresh cilantro
  • paprika
  • lemon wedges
  • salt and black pepper
  • tomatoes

Instructions
 

  • Rinse the tapioca pearls under cold water. In a bowl, cover the tapioca pearls with warm water and let them soak for 1-2 hours or until they become soft and translucent. Drain excess water.
  • In a large pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and continue to sauté for another minute until fragrant.
  • Add the chicken pieces to the pan. Cook until the chicken is no longer pink and starts to brown, stirring occasionally.
  • Stir in diced tomatoes, diced bell pepper, ground cumin, paprika, salt, and black pepper. Cook for a few minutes until the vegetables are tender but still have a slight crunch.
  • Add the soaked tapioca pearls to the pan. Mix well with the chicken and vegetables. Cook for an additional 5-7 minutes, stirring continuously, until the tapioca pearls are completely cooked and translucent.
  • Taste and adjust the seasoning with salt and black pepper if necessary.
  • Garnish the tapioca with chicken with freshly chopped cilantro. Serve hot with lime wedges on the side for squeezing over the dish.
