Ingredients
  

  • black bean
  • olive oil
  • onion
  • garlic
  • bell pepper
  • carrot
  • cumin
  • paprika
  • salt and black pepper
  • vegetable broth
  • cilantro
  • lemon wedges

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add minced garlic and diced bell pepper. Cook for a few minutes until the bell pepper starts to soften.
  • Stir in diced carrot, ground cumin, chili powder, paprika, salt, and black pepper. Mix well to combine the spices with the vegetables.
  • Add the drained and rinsed black beans to the pot. Pour in the vegetable or chicken broth. Bring the mixture to a gentle boil.
  • Reduce the heat to low and let the soup simmer for about 15-20 minutes, allowing the flavors to meld together and the vegetables to become tender. Stir occasionally.
  • For a creamier texture, use an immersion blender to partially blend the soup, leaving some chunks of beans and vegetables for texture. Alternatively, transfer a portion of the soup to a blender, blend until smooth, and return it to the pot.
  • Squeeze the juice of one lime into the soup. Adjust the seasoning if necessary.
  • Ladle the hot black bean soup into bowls. Garnish each serving with freshly chopped cilantro. If desired, top with a dollop of sour cream or Greek yogurt and a few slices of avocado. Serve hot with crusty bread or tortilla chips for a satisfying meal.
