Ingredients
  

  • beef stew meat
  • vegetable oil
  • carrot
  • potatoes
  • bellpepper
  • tomatoes
  • beef broth
  • paprika
  • salt and pepper
  • cilantro
  • cumin
  • rice
  • lime wedges
  • onion
  • garlic

Instructions
 

  • In a large pot, heat vegetable oil over medium-high heat. Add the cubed beef and sear them until browned on all sides. Remove the beef from the pot and set aside.
  • In the same pot, add chopped onion and cook until translucent. Add minced garlic and sauté for another minute until fragrant.
  • Stir in diced carrots, potatoes, and bell pepper. Cook for a few minutes until the vegetables begin to soften.
  • Add diced tomatoes, ground cumin, paprika, salt, and black pepper to the pot. Mix well to combine with the vegetables.
  • Pour in the beef broth, ensuring it covers all the ingredients. Bring the soup to a gentle boil, then reduce the heat to low. Let it simmer, partially covered, for about 1 to 1.5 hours, or until the beef is tender and the flavors are well melded. Stir occasionally and add more broth or water if needed to maintain the desired consistency.
  • Taste the soup and adjust the seasoning with salt and pepper if necessary.
  • Ladle the hot Paraguayan soup into bowls. Garnish each serving with freshly chopped cilantro. Serve with lime wedges on the side for squeezing over the soup. Accompany with cooked rice for a complete and satisfying meal.
