Ingredients
  

  • capeletti pasta
  • olive oil
  • onion
  • garlic
  • vegetable broth
  • tomatoes
  • carrot
  • oregano
  • salt and pepper
  • fresh parsley
  • celery stalk

Instructions
 

  • Cook the capeletti pasta according to the package instructions in a separate pot of boiling salted water until al dente. Drain and set aside.
  • In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent. Add minced garlic and continue to sauté for another minute until fragrant.
  • Stir in diced carrots and celery. Cook for a few minutes until the vegetables begin to soften.
  • Pour in chicken or vegetable broth. Add diced tomatoes (with their juice) to the pot. Bring the mixture to a gentle boil.
  • Add dried basil, dried oregano, salt, and black pepper. Reduce the heat to low and let the soup simmer for 10-15 minutes, allowing the flavors to meld together.
  • Add the cooked capeletti pasta to the soup. Stir well to combine. Let the soup simmer for an additional 5 minutes, allowing the pasta to absorb the flavors of the soup.
  • Taste the soup and adjust the seasoning with salt and pepper if necessary.
  • Ladle the hot capeletti soup into bowls. Garnish each serving with freshly chopped parsley and a generous sprinkle of grated Parmesan cheese. Serve hot with crusty bread for a complete and satisfying meal.
