Ingredients
  

  • 1 kg chicken, cut into pieces

  • 2 large onions, finely chopped

  • 3-4 tomatoes, chopped

  • 3-4 garlic cloves, minced

  • 1-inch piece of ginger, minced

  • 2-3 green chilies, slit (adjust to your spice preference)

  • 1/2 cup plain yogurt

  • 2 tablespoons vegetable oil

  • 1 teaspoon cumin seeds

  • 1 bay leaf

  • 2-3 green cardamom pods

  • 1-inch cinnamon stick

  • 4-5 cloves

  • 1 teaspoon ground coriander

  • 1/2 teaspoon turmeric powder

  • 1 teaspoon red chili powder (adjust to your spice preference)

  • 1 teaspoon garam masala

  • Salt to taste

  • Fresh coriander leaves for garnish

Instructions
 

  • In a large pot or deep pan, heat the vegetable oil over medium heat. Add the cumin seeds, bay leaf, green cardamom pods, cinnamon stick, and cloves. Sauté for a minute until the spices release their aroma.
  • Add the chopped onions and cook until they turn golden brown.
  • Stir in the minced garlic and ginger, and sauté for another minute until the raw smell disappears.
  • Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate from the mixture.
  • Lower the heat and add the ground coriander, turmeric powder, red chili powder, and salt. Mix well and cook the spices for a couple of minutes.
  • Add the chicken pieces to the pot and coat them evenly with the spice mixture. Cook for 5-6 minutes, stirring occasionally, until the chicken starts to brown.
  • Pour in the plain yogurt and mix it with the chicken and spices. Cook for a few more minutes until the chicken is well coated with the yogurt and the mixture thickens.
  • Add enough water to cover the chicken, and bring the curry to a simmer. Cover the pot and let the chicken cook on low to medium heat for about 25-30 minutes or until the chicken is tender and fully cooked.
  • Once the chicken is cooked, sprinkle garam masala over the curry and give it a final stir.
  • Garnish with fresh coriander leaves and serve the Goldi Chicken curry hot with steamed rice, naan, or any bread of your choice.
