Instructions
- If using chicken breasts, cut them into smaller, evenly sized pieces. If using chicken thighs, trim any excess fat.
- Place the chicken pieces in a large pot and cover them with chicken broth or water. Add salt, black pepper, garlic powder, onion powder, and a bay leaf if desired.
- Bring the liquid to a gentle boil over medium-high heat. Reduce the heat to low, cover the pot with a lid, and let the chicken simmer for 20-25 minutes (for chicken breasts) or 25-30 minutes (for chicken thighs) until fully cooked and tender.
- Place the chicken pieces in the slow cooker. Add chicken broth or water, salt, black pepper, garlic powder, onion powder, and a bay leaf if desired.
- Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and cooked through.
- Use tongs to remove the cooked chicken pieces from the pot or slow cooker and transfer them to a cutting board.
- Use two forks to shred the chicken into small, bite-sized pieces. Alternatively, you can use a hand mixer on low speed to quickly shred the chicken.
