  • Rinse the chicken inside and out, then pat it dry with paper towels. Let it sit at room temperature for about 20-30 minutes to ensure even cooking.
  • In a small bowl, mix together the softened butter, minced garlic, lemon zest, salt, pepper, paprika, and dried thyme or rosemary.
  • Gently separate the skin from the chicken breasts and thighs by sliding your fingers under the skin. Be careful not to tear it.
  • Spread about 2/3 of the seasoned butter mixture under the skin, spreading it evenly over the breasts and thighs.
