Ingredients
  

  • boneless, skinless chicken breasts, cut into strips
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tbsp all-purpose flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • Salt and black pepper to taste
  • Fresh parsley , chopped, for garnish
  • Cooked pasta, rice, or noodles , for serving

Instructions
 

  • Sauté Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook until browned and cooked through, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.
  • Cook Vegetables: In the same skillet, add chopped onion and cook until translucent, about 2-3 minutes. Add minced garlic and sliced mushrooms. Cook until the mushrooms are tender and any liquid released has evaporated.
  • Make Sauce: Sprinkle the flour over the mushrooms and stir to combine. Slowly pour in the chicken broth, stirring constantly to avoid lumps. Bring the mixture to a simmer, then reduce the heat to low.
  • Add Sour Cream and Mustard: Stir in the sour cream and Dijon mustard until the sauce is smooth and creamy. Season with salt and black pepper to taste.
  • Combine Chicken and Sauce: Return the cooked chicken to the skillet and coat it evenly with the sauce. Let it simmer for a few minutes to meld the flavors together.
  • Serve: Serve the Chicken Stroganoff over cooked pasta, rice, or noodles. Garnish with chopped fresh parsley before serving.
