Ingredients
  

  • semolina
  • ghee
  • sugar
  • water
  • milk
  • nuts
  • ground cardamom
  • saffron threads
  • raisins

Instructions
 

  • In a small bowl, soak the saffron threads in warm milk and set them aside for later use.Chop the nuts if using whole nuts.
  • In a heavy-bottomed pan or kadai, heat the ghee over medium-low heat.
  • Add the semolina (sooji) to the melted ghee and roast it, stirring continuously, until it turns a light golden color and releases a nutty aroma. Be careful not to burn the semolina.
  • In a separate saucepan, bring the water to a boil. Add the sugar to the boiling water and stir until the sugar dissolves completely.
  • Carefully pour the hot sugar syrup into the roasted semolina mixture while stirring continuously to avoid lumps.
  • Reduce the heat to low and let the semolina cook in the sugar syrup. The mixture will start to thicken.
  • Stir in the saffron-infused milk and mix well. The saffron will give the Soji a beautiful golden hue and a subtle flavor.
  • Add the chopped nuts and ground cardamom to the mixture, reserving some nuts for garnish if desired.
  • Keep stirring the Soji over low heat until it thickens and starts to leave the sides of the pan. It should have a smooth and velvety texture.
  • Once the Soji reaches the desired consistency, remove it from the heat.Garnish with a few extra nuts and, if desired, some raisins for added sweetness and texture.
  • Serve the Soji warm or at room temperature as a delightful dessert after a meal or as a sweet treat for any occasion.
