South African Savoury Rice

Ingredients
  

  • white rice
  • vegetable oil
  • cinnamon sticks
  • onion
  • cardamom pods
  • whole cloves
  • salt and peper
  • paprika
  • turmeric
  • coriander
  • all spice
  • ginger
  • bay leaf
  • coconut milk
  • vegetable broth

Instructions
 

  • Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. Drain any excess water.
  • In a medium-sized pot, heat the vegetable oil or butter over medium heat. Add the chopped onion and sauté until it becomes translucent.
  • Stir in the minced garlic, cinnamon stick, crushed cardamom pods, whole cloves, ground turmeric, ground cumin, ground coriander, ground ginger, ground nutmeg, ground allspice, and the bay leaf. Cook for a minute or until the spices become fragrant.
  • Add the rinsed rice to the pot and stir it well to coat the rice with the spices.Pour in the chicken or vegetable broth and coconut milk (if using) and bring the mixture to a boil.
  • Once the mixture comes to a boil, reduce the heat to low. Cover the pot with a tight-fitting lid and let the rice simmer for 15-20 minutes or until the rice is tender and has absorbed all the liquid.
  • Once the rice is cooked, remove the pot from the heat. Let the rice sit, covered, for a few minutes.
  • Remove the cinnamon stick, cardamom pods, cloves, and bay leaf from the rice. Fluff the rice with a fork to separate the grains.
  • Season the Savoury Rice with salt and pepper to taste. Adjust the seasoning according to your preference.
  • Garnish the rice with freshly chopped cilantro or parsley for a burst of freshness.
  • The Savoury Rice is now ready to be served. Pair it with your favorite meat or vegetable dishes, and relish the delightful flavors of South Africa.
