Ingredients
  

  • all purpose lour
  • yeast
  • sugar
  • salt
  • warm water
  • olive oil
  • zatar spice
  • olive oil
  • sliced tomatoes
  • cucumber
  • labneh
  • olive
  • mint leaves

Instructions
 

  • In a small bowl, mix the warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until the yeast becomes frothy and activated.
  • In a large mixing bowl, combine the flour and salt. Add the activated yeast mixture and olive oil to the dry ingredients.
  • Mix and knead the dough until it forms a smooth and elastic ball. You can do this by hand or with the help of a stand mixer fitted with a dough hook.
  • Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 to 1.5 hours or until it doubles in size.
  • Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven while it preheats to get it nice and hot.
  • In a small bowl, mix the Za'atar spice blend with the olive oil until well combined. Adjust the olive oil quantity to achieve your preferred consistency.
  • Divide the risen dough into small balls, about the size of a golf ball. On a floured surface, roll out each ball into a thin circle, approximately 6-8 inches in diameter.
  • Transfer the rolled-out dough circles onto baking sheets or a hot pizza stone.
  • Spread a generous amount of the Za'atar and olive oil mixture over each dough circle, leaving a small border around the edges.
  • If desired, add sliced tomatoes, cucumbers, olives, labneh, or mint leaves on top of the Za'atar mixture for extra flavor and texture.
  • Place the topped dough circles in the preheated oven and bake for about 10-15 minutes or until the edges are golden brown, and the dough is fully cooked.
  • Once baked, remove the Manoushe from the oven and serve them warm. Enjoy the delicious Lebanese flatbreads as a breakfast or snack, either by themselves or accompanied by your favorite Middle Eastern dips.
