Ingredients
  

  • cucumbers
  • red onion
  • fresh dill
  • fresh parsley
  • saltand black pepper
  • olive oil
  • honey
  • garlic
  • salt and black pepper

Instructions
 

  • Thinly slice the cucumbers and red onion. Finely chop the fresh dill and parsley. Place them all in a large mixing bowl
  • In a small bowl, whisk together the extra virgin olive oil, white wine vinegar, honey or maple syrup, minced garlic, salt, and black pepper. Adjust the seasoning to taste.
  • Pour the vinaigrette over the sliced cucumbers, red onion, and herbs. Toss gently to ensure the vegetables are well coated with the dressing. Taste and adjust the salt and pepper if necessary.
  • Let the cucumber salad chill in the refrigerator for at least 10-15 minutes before serving. Chilling allows the flavors to meld together, enhancing the overall taste of the salad.
  • Just before serving, garnish the cucumber salad with additional fresh dill and parsley for a burst of color and freshness. Serve the salad as a refreshing side dish or enjoy it on its own for a light and healthy meal.
