Ingredients
  

  • all purpose flour
  • hot water
  • chicken or pork
  • onion
  • cabbage
  • garlic
  • soy sauce
  • salt and pepper
  • ginger
  • sesame oil

Instructions
 

  • In a mixing bowl, gradually add hot water to the flour, stirring with chopsticks or a fork, until a dough begins to form.
  • Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
  • Divide the dough into small pieces and roll each piece into a thin, round wrapper, about 3 inches in diameter. Ensure the edges are thinner than the center for easier sealing.
  • In a mixing bowl, combine ground pork or chicken, finely chopped napa cabbage, green onions, minced garlic, grated ginger, soy sauce, sesame oil, black pepper, and salt. Mix the ingredients thoroughly to create a well-seasoned filling.
  • Place a small spoonful of filling in the center of each wrapper.Dip your finger in water and run it along the edge of the wrapper to moisten.
  • Fold the wrapper in half and pinch the edges together to seal, pleating the edges if desired to create a decorative border.
  • Bring a pot of water to boil. Carefully drop the dumplings into the boiling water and cook until they float to the surface and the skins become translucent (about 5-7 minutes).
  • Place the dumplings in a bamboo steamer lined with parchment paper. Steam over boiling water for 10-12 minutes or until the dumplings are cooked through.
  • Heat oil in a non-stick pan over medium-high heat. Place the dumplings in the pan, flat side down, and cook until the bottoms are golden brown. Add water to the pan, cover, and steam for a few minutes until the dumplings are cooked and the water is absorbed.
  • Serve the Authentic Chinese Dumplings hot, accompanied by dipping sauces like soy sauce mixed with vinegar, chili oil, or a combination of your favorite flavors.
