    eggplant

    zucchinis

    yellow bell pepper

  • 2-3 cloves of garlic, minced
  • 2-3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Start by slicing the eggplant, zucchinis, and bell peppers into thin rounds or strips. You can leave the skin on.
  • Slice the tomatoes into thin rounds as well. Set aside.
  • Heat the olive oil in a large skillet or ovenproof pan over medium heat. Add the minced garlic and sauté for a minute until fragrant.
  • Add the sliced onion and sauté for a few minutes until it becomes translucent.
  • Arrange the sliced vegetables in an alternating pattern, overlapping slightly, around the skillet. You can start from the outer edge and work your way in.
  • Sprinkle the dried thyme, dried oregano, salt, and pepper evenly over the vegetables.
  • Cover the skillet and let the vegetables simmer over low-medium heat for about 20-25 minutes, or until they are tender but not mushy. You can occasionally press the vegetables gently with a spatula to help them cook evenly.
  • Preheat your oven to 350°F (175°C).
  • Once the vegetables are tender, transfer the skillet to the preheated oven and bake for an additional 10-15 minutes to allow the flavors to meld and the top to become slightly browned.
  • Remove from the oven, let it cool slightly, and garnish with fresh basil leaves.
