Ingredients
  

  • 8 ounces (about 225 grams) spinach pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 cups fresh spinach leaves
  • 1/2

    cup grated Parmesan cheese

  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Optional: red pepper flakes for a bit of heat

  • Optional garnish: fresh basil leaves and extra Parmesan cheese

Instructions
 

  • Bring a large pot of salted water to a boil. Add the spinach pasta and cook according to the package instructions until it's al dente. Drain the pasta, reserving about 1/2 cup of pasta cooking water.
  • While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds or until fragrant. Add the halved cherry tomatoes and cook for 2-3 minutes until they start to soften.
  • Add the fresh spinach leaves to the skillet and toss with the garlic and tomatoes. Cook for another 2-3 minutes, or until the spinach wilts.
  • Add the drained spinach pasta to the skillet with the sautéed vegetables. Toss everything together, adding a bit of reserved pasta cooking water if needed to create a silky sauce.
  • Season the dish with salt, pepper, and red pepper flakes if you like a bit of heat. Sprinkle grated Parmesan cheese over the top and gently toss to combine.
