Ingredients

Instructions
 

  • Rinse the dried sugar beans (navy beans) under cold running water and drain them.
    Place the rinsed beans in a large bowl and cover them with water. Allow them to soak overnight or for at least 8 hours. Drain and rinse the beans before using.
  • In a large soup pot, heat the olive oil over medium heat.
    Add the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Sauté for about 5-7 minutes until the vegetables become slightly softened.
  • Add the soaked and drained sugar beans to the pot.
    Toss in the bay leaf, dried thyme, and season with salt and black pepper to taste.
    Stir the ingredients well to combine.
  • Add the diced tomatoes to the pot and continue to stir.
  • Pour in the vegetable or chicken broth, ensuring that the beans and vegetables are fully submerged.
  • Bring the mixture to a boil over high heat.
    Once it boils, reduce the heat to low, cover the pot with a lid, and let the soup simmer for about 1 to 1.5 hours. Stir occasionally.
  • After about 1 hour, check the tenderness of the sugar beans. They should be soft and creamy when done. If needed, simmer for an additional 15-30 minutes until they reach the desired consistency.
