Ingredients
  

  • beef stew meat
  • vegetable oil
  • onion
  • garlic
  • caraway seeds
  • carrot
  • potatoes
  • bell peppers
  • tomato soup
  • beef broth
  • salt and pepper

Instructions
 

  • In a large pot, heat the vegetable oil over medium-high heat. Add the beef stew meat and sear it until it's browned on all sides. Remove the beef from the pot and set it aside.
  • In the same pot, add the chopped onions and minced garlic. Sauté for about 2-3 minutes until the onions become translucent.
  • Sprinkle the sweet paprika and caraway seeds over the sautéed onions and garlic. Stir well to coat the onions in the spices.
  • Add the sliced carrots, diced bell peppers, and diced potatoes to the pot. Stir to combine with the onions and spices.
  • Return the seared beef to the pot and mix it in with the vegetables.
  • Pour in the condensed tomato soup and beef broth. Stir well to combine all the ingredients. Season with salt and black pepper to taste. Remember that the tomato soup and beef broth can be salty, so adjust accordingly.
  • Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let the goulash simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together. Stir occasionally.
  • Once the goulash is ready, ladle it into bowls. If desired, garnish each serving with a dollop of sour cream and a sprinkle of chopped fresh parsley. Serve the goulash hot, accompanied by crusty bread or over cooked noodles or rice.
