Instructions
- In a bowl, combine the minced garlic, lemon juice, olive oil, paprika, cayenne pepper, salt, and black pepper to create the chicken marinade.
- Place the chicken breasts in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes. Marinating longer, even overnight, enhances the flavor.
- In a saucepan, melt the butter over medium heat.Add the minced garlic to the melted butter and sauté for about 1 minute until fragrant
- Stir in the peri-peri sauce, lemon juice, paprika, salt, and black pepper. Simmer for a few minutes until the sauce is heated through and well combined. Set the sauce aside.
- Preheat your grill or grill pan to medium-high heat.
- Remove the chicken breasts from the marinade and grill them for about 4-5 minutes per side, or until they are cooked through and have nice grill marks. Baste the chicken with any remaining marinade during grilling.
- Split the Portuguese rolls or hamburger buns and lightly toast them on the grill or in a toaster.Place a lettuce leaf on the bottom half of each roll, followed by a grilled chicken breast.
- Top the chicken with sliced tomatoes, onions, and pickles (if using).Drizzle the prepared Prego sauce over the chicken and toppings. Add extra peri-peri sauce if you like it spicier.
- Place the top half of the roll on each sandwich to complete your Chicken Prego Roll.
- Serve your Chicken Prego Rolls immediately while they're hot and enjoy the flavorful combination of marinated chicken and zesty sauce.
