Ingredients
  

  • broccoli florets (green)
  • red bell pepper
  • carrot
  • matchsticks
  • yellow bell pepper
  • purple cabbage
  • snow peas
  • corn kernels

Instructions
 

  • In a small bowl, whisk together the soy sauce, hoisin sauce, honey or maple syrup, minced garlic, and grated fresh ginger. Set this stir-fry sauce aside.
  • In a separate small bowl, mix the cornstarch and water to create a slurry. This will be used to thicken the sauce during cooking.
  • Heat the vegetable oil in a large skillet or wok over high heat.
    Add the broccoli florets and stir-fry for 2 minutes until they start to turn bright green and are slightly tender.
  • Add the red bell pepper, carrot matchsticks, yellow bell pepper, and purple cabbage to the skillet. Continue stir-frying for another 2-3 minutes until the vegetables begin to soften
  • Add the snow peas and corn kernels to the skillet and stir-fry for an additional 2 minutes until the snow peas are vibrant green and the corn is heated through.
  • Transfer the rainbow vegetable stir-fry to a serving platter or individual plates.
    Garnish with sesame seeds and chopped green onions if desired.
  • Serve your Rainbow Vegetable Stir-Fry as a colorful and nutritious main dish. Enjoy the variety of flavors and textures in every bite.
