Equipment

  • skillet
  • bowl
  • Food processor or blender

Ingredients

  • chicken or pork liver
  • onion
  • garlic
  • butter
  • milk
  • mayonnaise
  • soy sauce
  • pork or chicken broth
  • black pepper
  • salt
  • paprika
  • bay leaf

Instructions

  • Clean the chicken or pork liver by removing any connective tissues or membranes. Rinse it thoroughly under cold water.
  • In a skillet or frying pan, heat the butter or cooking oil over medium heat.
Add the chopped onion and minced garlic to the pan. Sauté until they become soft and translucent, about 2-3 minutes.
  • Add the cleaned and trimmed liver to the pan. Cook the liver until it's no longer pink on the inside, about 5-7 minutes. Make sure to stir occasionally to cook it evenly.
  • Transfer the cooked liver, onion, and garlic to a blender or food processor.
Add the milk, chicken or pork broth, mayonnaise, soy sauce, salt, black pepper, and paprika (if using) to the blender.
  • Blend everything until you achieve a smooth and creamy consistency. You may need to scrape down the sides of the blender and blend again to ensure everything is well combined.
  • Return the blended liver mixture to the skillet or frying pan.
Add the bay leaf (if using) to the mixture.
  • Cook the liver spread over low heat, stirring continuously, for about 15-20 minutes. This helps to thicken the spread and develop the flavors. Remove the bay leaf after cooking.
  • Allow the liver spread to cool to room temperature.
Once cooled, transfer it to an airtight container and refrigerate. It can be stored in the refrigerator for up to one week.
  • Serve your homemade liver spread as a sandwich filling, dip, or condiment. Enjoy the creamy and savory flavors.
