  • 6-8 ripe tomatoes, washed and quartered

  • 2 cups vegetable or chicken broth
  • 1 bay leaf

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • Salt and pepper to taste

Instructions
 

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until they become translucent, about 5 minutes.
  • If you're using carrots and celery, add them to the pot and cook for an additional 5 minutes.
  • Add the quartered tomatoes, bay leaf, dried basil, and dried oregano to the pot. Cook for about 10 minutes, stirring occasionally, until the tomatoes start to break down and release their juices.
  • Pour in the vegetable or chicken broth, and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 20-25 minutes.
  • Remove the bay leaf, and use an immersion blender or a regular blender to puree the soup until smooth. If using a regular blender, be cautious as the soup will be hot.
  • Return the soup to the pot and reheat it gently. Season with salt and pepper to taste.
