Ingredients
  

  • stewing beef
  • beef broth
  • salt and pepper
  • vegetable oil
  • garlic
  • coriander
  • cumin
  • paprika
  • tumeric
  • carrot
  • cabbage
  • thyme
  • potatoes
  • paprika
  • onion
  • salt and pepper

Instructions
 

  • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
    Add the bite-sized pieces of stewing beef and brown them on all sides. This should take about 5-7 minutes. Remove the browned meat from the pot and set it aside.
  • In the same pot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent and fragrant.
  • Stir in the ground coriander, ground cumin, ground turmeric, ground paprika, and dried thyme. Cook for an additional 1-2 minutes to toast the spices and release their flavors.
  • Return the browned meat to the pot.
    Add the chopped cabbage, sliced carrots, and diced potatoes to the pot. Mix everything together.
  • Pour the beef broth over the meat and vegetables, ensuring they are well-covered.
  • Season with salt and pepper to taste. Stir well.
    Cover the pot, reduce the heat to low, and let the cabbage bredie simmer for about 1 hour to 1 hour and 15 minutes, or until the meat is tender and the vegetables are soft.
  • Once the cabbage bredie is ready, ladle it into bowls.
    Garnish with fresh parsley if desired.
  • Serve your homemade cabbage bredie as a comforting and flavorful South African stew. It can be enjoyed on its own or with a side of cooked rice or bread.
