Equipment

  • mixing bowl
  • whisk
  • crumpet rings
  • skillet
  • spatula

Ingredients

  • all-purpose flour
  • sugar
  • salt
  • active dry yeast
  • warm milk
  • warm water
  • baking soda
  • butter

Instructions

  • In a mixing bowl, combine the warm water and active dry yeast. Let it sit for 5-10 minutes, or until it becomes frothy and bubbly.
  • In a separate bowl, whisk together the all-purpose flour, sugar, and salt.
  • Pour the frothy yeast mixture into the dry ingredients and mix until you have a smooth batter. It should be thicker than pancake batter but not as thick as bread dough.
  • Cover the mixing bowl with a clean kitchen towel and let the batter rest in a warm place for about 30 minutes. During this time, it should become slightly bubbly and increase in volume.
  • After the resting period, dissolve the baking soda in the warm milk. Then, stir this mixture into the batter until well combined.
  • Grease the inside of your crumpet rings or English muffin rings with butter to prevent sticking. Also, lightly grease a skillet or griddle.
  • Place the greased rings onto the greased skillet or griddle over medium-low heat.Spoon about 2-3 tablespoons of batter into each ring, filling them to about halfway. The crumpets will expand as they cook.
  • Cook for approximately 5-7 minutes or until the surface is filled with small bubbles and the edges appear set.
  • Carefully lift off the rings using tongs or a cloth to protect your hands.
  • Flip the crumpets over and cook for an additional 2-3 minutes, or until the bottoms are golden brown and the crumpets are cooked through.
  • Serve the warm crumpets with plenty of butter. You can also enjoy them with jam, honey, or your favorite toppings.

Notes

  • Crumpet rings or English muffin rings are helpful for shaping the crumpets, but you can also use clean, empty tuna cans with the tops and bottoms removed.
  • The key to achieving those characteristic holes in crumpets is the batter's consistency and the right cooking technique.
