Ingredients
  

  • 2 ripe bananas

  • 1 cup all-purpose flour

  • 2 tablespoons sugar

  • 1 teaspoon baking powder

  • A pinch of salt

  • 1/2 teaspoon ground cinnamon (optional)

  • 1/2 cup milk

  • 1 teaspoon vanilla extract (optional)

  • Vegetable oil for frying

Instructions
 

  • Peel the ripe bananas and slice them into rounds or lengthwise, depending on your preference. Set aside.
  • In a mixing bowl, combine the flour, sugar, baking powder, salt, and ground cinnamon if using. Mix well to combine the dry ingredients.
  • Add the milk and vanilla extract (if using) to the dry ingredients. Stir until you have a smooth batter. The batter should be thick enough to coat the back of a spoon but not too runny.
  • Heat vegetable oil in a deep frying pan or skillet over medium-high heat. You'll need enough oil to submerge the banana slices.
  • Once the oil is hot (around 350°F or 175°C), dip the banana slices into the batter, making sure they are well coated, and carefully place them in the hot oil. Be cautious not to overcrowd the pan; fry in batches if necessary.
