Ingredients
  

  • chocolate
  • heavy cream
  • eggs
  • granulated sugar
  • pinch of salt
  • whipped cream

Instructions
 

  • Place the chopped chocolate in a heatproof bowl. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the chocolate. Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth. Allow it to cool slightly.
  • Separate the egg yolks from the whites, placing the yolks in one mixing bowl and the whites in another. Make sure there are no traces of egg yolk in the whites.
  • Whisk the egg yolks, granulated sugar, vanilla extract, and a pinch of salt together in the bowl with the yolks until the mixture becomes pale and slightly thick.
  • Gradually whisk the melted chocolate mixture into the egg yolk mixture until well combined. Set aside.
  • Using an electric mixer or hand mixer, whip the egg whites until stiff peaks form. This will take a few minutes.
  • Gently fold one-third of the whipped egg whites into the chocolate mixture to lighten it. Then, carefully fold in the remaining egg whites until fully incorporated. Be gentle to maintain the mousse's airy texture.
  • Divide the chocolate mousse mixture evenly into serving glasses or bowls. Cover each with plastic wrap and refrigerate for at least 2-3 hours, or preferably overnight, to allow the mousse to set.
  • Before serving, you can top the chocolate mousse with whipped cream, chocolate shavings, or fresh berries if desired.
  • Serve your chocolate mousse chilled and savor its creamy, chocolatey goodness.
