Funfetti Cake Recipe

Funfetti cake is a classic, light, and moist white cake filled with vibrant rainbow sprinkles. It's typically frosted with a creamy vanilla buttercream and topped with even more sprinkles. This recipe will guide you through making your own homemade funfetti cake from scratch.

Ingredients
  

  • all purpose flour
  • baking powder
  • baking soda
  • salt
  • unsalted butter
  • granulated sugar
  • eggs
  • vanilla extract
  • butter milk
  • whole milk
  • rainbow sprinkles

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper for easy removal.
  • In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, using an electric mixer or hand mixer, cream together the softened butter and granulated sugar until light and fluffy, which should take about 2-3 minutes.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry mixture. Mix until just combined, being careful not to overmix.
  • Gently fold in the rainbow sprinkles into the cake batter.
  • Divide the cake batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean or with just a few moist crumbs.
  • Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
  • In a separate mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk or heavy cream, and vanilla extract. Beat until the frosting is smooth and creamy.
  • Once the cakes are completely cool, frost the top of one cake layer. Place the second cake layer on top and frost the top and sides of the entire cake.
  • Decorate the frosted cake with additional rainbow sprinkles.
