- electric mixer
- parchment paper
- cooling rack
Ingredients
- all purpose flour
- baking powder
- baking soda
- salt
- unsalted butter
- granulated sugar
- eggs
- vanilla extract
- butter milk
- whole milk
- rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper for easy removal.
- In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, using an electric mixer or hand mixer, cream together the softened butter and granulated sugar until light and fluffy, which should take about 2-3 minutes.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry mixture. Mix until just combined, being careful not to overmix.
- Gently fold in the rainbow sprinkles into the cake batter.
- Divide the cake batter evenly between the prepared cake pans. Smooth the tops with a spatula.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean or with just a few moist crumbs.
- Allow the cakes to cool in the pans for about 10 minutes, then remove them from the pans and place them on a wire rack to cool completely.
- In a separate mixing bowl, beat the softened butter until creamy. Gradually add the powdered sugar, milk or heavy cream, and vanilla extract. Beat until the frosting is smooth and creamy.
- Once the cakes are completely cool, frost the top of one cake layer. Place the second cake layer on top and frost the top and sides of the entire cake.
- Decorate the frosted cake with additional rainbow sprinkles.
- Slice and serve your delicious homemade funfetti cake, and enjoy the colorful, celebratory treat!
