  • 1/2 cup (1 stick) unsalted butter, cold and cubed

  • 3-4 tablespoons ice water

For the Apple Filling:

  • 2 apples (e.g., Granny Smith or Honeycrisp), peeled, cored, and diced into small pieces

  • 1/4 cup granulated sugar

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1 tablespoon lemon juice

  • 1 tablespoon cornstarch

For Assembly:

  • 1 egg (for egg wash)

  • Granulated sugar (for sprinkling)

Instructions
 

  • In a food processor, combine the flour, salt, and sugar. Pulse a few times to mix.
  • Add the cold, cubed butter to the flour mixture and pulse until it resembles coarse crumbs.
  • Gradually add the ice water, one tablespoon at a time, and pulse until the dough starts coming together. Be careful not to overmix.
  • Turn the dough out onto a clean surface, form it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • In another mixing bowl, combine the diced apples, granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss until the apples are evenly coated. Set aside.
  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • On a lightly floured surface, roll out the chilled pie dough to about 1/8-inch thickness.
  • Use a round cutter or a glass to cut out circles of dough, each about 4-5 inches in diameter. These will be the bottoms and tops of your mini pies.
  • Place a tablespoon or two of the apple filling onto the center of half of the dough circles.
  • Cover each filled circle with another dough circle, and press the edges together to seal.
  • Use a fork to crimp the edges for a decorative touch.
  • Beat the egg to make an egg wash and brush it over the tops of the mini pies. Sprinkle with a little granulated sugar for extra sweetness and texture.
  • Place the assembled mini pies on the prepared baking sheet.
