Ingredients
- all purpose flour
- granulated sugar
- dry yeast
- warm milk
- warm water salt
- unsalted butter

Instructions
- In a small bowl, combine the warm milk and warm water. Sprinkle the yeast over the liquid, add a pinch of sugar, and let it sit for about 5-10 minutes until foamy.In a large mixing bowl, whisk together the flour, sugar, and salt.
- Pour the yeast mixture into the flour mixture and stir until it forms a shaggy dough.Knead the dough on a floured surface for about 5 minutes until smooth. Shape it into a rectangle, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Place the cold butter between two sheets of parchment paper and pound it with a rolling pin until it's about 1/2 inch thick. Shape it into a rectangle measuring about 8x5 inches. Chill for 15 minutes.
- Roll out the chilled dough on a floured surface into a larger rectangle, about 16x10 inches.Place the butter layer on half of the dough, then fold the other half over the butter layer, enclosing it completely.
- Roll out the dough again into a rectangle, then fold it into thirds, like a letter.Wrap the dough in plastic wrap and refrigerate for 30 minutes. Repeat this folding and chilling process two more times.
- After the final fold and chill, roll out the dough to a rectangle, about 1/4 inch thick.Cut the dough into squares or rectangles, depending on the size of your chocolate sticks.
- Place a stick of chocolate at one end of each piece and roll the dough around it, sealing the edges.Place the pain au chocolat on a parchment-lined baking sheet, seam side down.
- Preheat your oven to 400°F (200°C).Beat an egg and brush it over the pain au chocolat for a golden finish.
- Bake for 15-20 minutes or until the pastries are golden brown and puffed.Let them cool slightly before enjoying your homemade pain au chocolat.
